You can think of Slap’s behaviour as being equivalent to a Reply all in your mailbox.
When a new email is synced with Notion, the Contact email(s) property of your Notion page is updated to contain all the recipients of that email.
(Psst: if it’s not the case yet, think of changing the Contact email(s) property from Email to Text, more info here).
When replying from Notion, the recipients of your email will be the email address(es) listed in the Contact email(s) property of your Notion page.
To change the recipient(s), simply edit the Contact email(s) property of your Notion page.
For multiple recipients, separate the email addresses with commas.

For the moment, you cannot, when initiating a new email conversation from Notion, add contacts in CC. If you wish to do that, we advise you to start the email conversation from your mailbox (and then continue in Notion).
